Happy Back to School! This year is a biggie for me. My youngest starts school, which means double duty on lunch box prep. After a summer of picnics, play dates and meals on-the-go, I’m out of energy and ideas. So I am looking at these Toronto (and Ontario) moms for some delicious, healthy and easily packable back-to-school food inspiration.

Camp Fuel! Last night Scarlett insisted that we make these Overnight Peanut Butter Coconut Oats. When I groaned from exhaustion she promised to do all the work (make the mix and do the cleaning) so here's her creations. Scarlett is the blueberry and I have the peach and cherry. The best part is the chocolate mint leaf from the garden. Now if she'd just get around to completing the miles of unfinished gimp bracelets from camp!
